Scopeto del Cavalli has always been farmed organically, and in 1993 was one of the first to obtain organic certification in Montalcino.
Both the wild flowers and the olive trees have been purposely left in the vineyard–leveraging permacultural and biodynamic practices–to enhance biodiversity and encourage the symbiosis of olives and vines.
The surface of the vineyard is less than a hectare, thus grapes are well cared for and wine production is fine tuned by hand.
At harvest time, the grapes are carefully selected, and taken to the Cupano winery where a further selection takes place. The wine then ferments in stainless steel vats, and is aged in French oak barriques.
